This beer was foudre-aged for close to a year and it reached maturity in the same barrel as the award-winning beer, Etcetera's, inspiring the name ‘And So Forth’. A complex malt bill and a touch of rye gives a subtle earthy backbone to the beer. To balance the acidity it was conditioned on 460 lbs. of hand-pitted apricots for 6 weeks. Can conditioning gives this beer a pleasant effervescent quality.
