Convergent Evolution is the true convergence of Spontaneous and Mixed fermentation. Fermented in red wine barrels for 2, 3 & 4 years, this blend combines the unique characteristics of both methods. The blend of 75% Spontaneous and 25% Mixed fermentation results in a balanced beer with stone fruit and ripe apple aromatics, savory wine depth, with a bright citrus finish and medium acidity.
