Il Sivo Nero d’Avola Sicilia Leggero Appassimento is a sumptuous and balanced wine, the result of the earth warmed by the scorching sun and caressed by the sea breeze.
A native Sicilian grape variety par excellence, Nero d’Avola is rooted in the tradition of the most fascinating Mediterranean island and rich in culture.
The grapes of Nero d’Avola Il Sivo are harvested by hand at the end of September after undergoing a slight drying in the plant.
The late harvest allows the development of perfumes and taste elements that are expressed in the glass with a feeling of roundness and unparalleled depth.
After fermentation, the wine is aged for 18-24 months by performing the operations of bâtonnage to put the noble scum back in suspension and favor the sale to the wine of compounds that will give softness and elegance.
Color: Intense ruby red with purple shades.
Perfume: Elegant bouquet with notes of red fruits.
Taste: Soft and elegant, with good persistence.
