Sonata is the Montmorency cherry at its finest. They add whole cherries to their cider, stones and all.
After five months of maceration what's left is cherry blaster fruit and grippy tannins, interwoven with sweet almond.
Sonata is like cycling through the park with childhood friends, when life was less complicated. Beautiful in its simplicity: apple and cherry with the aromatics of native microflora.
