One bright spring morning, Establishment joined their friends at Brewsmith to forage nearly ten kilos of fresh lilacs around Calgary. Back at the brewery, they blended them with 45kg of raw local honey from MOB Honey, and fermented the brew on their own house culture for the next few months. The resulting beer is softly floral, with honey providing a balancing backbone.
